When you’re out having a good time, you’ll need to eat many calories. Many hikers make this mistake when packing. I often forget to pack enough fat on the trail and end up regretting it. There’s just so much trail mix one can consume in a single day. I’ve recently started delivering high-octane cookies to the peaks in Juneau, Alaska, where I live and work. Baking is not an option for someone who lives in an automobile. As a result, no-bake cookies have become a favorite of mine.
We put these recipes to the test on a three-hour trip up and down Mount Juneau, which included a 3,000-foot ascent in just three miles and a quick stop at a pond to cool off. We were pretty much drained at the midway point because it was 85 degrees and sunny.
Later that day, we doubled up on dessert and went for a nature picture session by a waterfall. The cookies were successful in their mission. We were exhausted when we sat down, but we felt like we could climb three more mountains after eating.
The first recipe serves as a foundation. Feel free to add chocolate chips, coconut flakes, or powdered milk to make them even more delicious. Whatever tastes nice in another cookie will taste good in this one.
